Healthy Seaweed Salad

Seaweed is such a superfood - this is how to make a simple salad using wakame, laver and kelp


Mondays are alway a bit of a slog as I have to be at work for about 7.30am and Mr Jones is playing football this evening so it's something quick and easy on the menu for me tonight!  Luckily I made a big batch of gyoza this weekend so all I need to do is take some out of the freezer and let them defrost while I make this delicious and easy seaweed salad.  It's so easy you don't really need to measure anything so the list of ingredients looks a bit vague...

When I went a bit crazy in the Asian supermarkets in Exeter I bought three types of dried seaweed - laver, wakame and kombu.  Correct me if I'm wrong though because there was nothing on the packets in English besides "seaweed"!  I love seaweed - not only is it packed full of things that are good for you  it's easy to prepare and if you have a sniff of it while you're soaking it you can close your eyes and be instantly transported to a beach!

So the longest bit of this recipe is soaking the dried seaweed.  I use warm tap water to soak it with for about 10 minutes, drain, refill with warm water and soak for another 10 minutes.  Some seaweed can be really salty so it's important to rinse well.





While the seaweed is soaking, finely slice 1 medium spring onion.  Garlic also works well - use a finely diced medium clove.

Heat the sesame oil on a medium heat then add the spring onions.  Cook for a couple of minutes until soft then add the drained seaweed.  Cook for another few minutes until everything is heated through, stir in the sesame seeds and serve.  It's as simple as that!




A simple seaweed salad goes so well with homemade gyoza (Japanese dumplings)


Ingredients
A small handful of your favourite dried seaweed
1 medium spring onion or clove of garlic
1 1/2 teaspoons sesame oil
1 1/2 teaspoons black sesame seeds

If you don't have a Chinese supermarket near you, Amazon seem to have a pretty good selection!  My favourites are:

- Dried wakame
- Dried kelp
- Dried laver
- Black sesame seeds
